Quick Calamari Salad
Calamari Salad
Squid Rings
Looking for something super easy? This salad only uses a few basic ingredients, but is still really tasty and easy to throw together once the calamari has been marinated . . . perfect for summer!
Ingredients:
  • 500g Calamari (squid tubes or rings)
  • 1/4 cup soy sauce
  • 2 tbsp sweet chilli sauce
  • 2 cloves garlic, chopped
  • 6-8 cups salad greens
  • Juice of 1 large lemon
  • 1 1/2 cups olive oil
  • 1 tsp sesame oil
  • Handful parsley, coarsely chopped
Method:
  1. Place calamari in a colander in a sink full of cold water to thaw for 10 minutes.
  2. Drain, pat dry with a cloth or paper towels and then marinate in the soy sauce, sweet chilli sauce and garlic for at least an hour.
  3. Just before serving, drizzle lemon juice and olive oil over the salad leaves and toss well.
  4. Grill the calamari very quickly on the hottest part of the grill until it is lightly browned.
  5. Slice, and scatter over the salad leaves
  6. Sprinkle with sesame oil and chopped parsley and season with salt and freshly ground pepper to taste.
Serves: 4 as an entree or light meal
