Looking for something super easy? This salad only uses a few basic ingredients, but is still really tasty and easy to throw together once the calamari has been marinated . . . perfect for summer! |

Ingredients: |
- 500g Calamari (squid tubes or rings)
- 1/4 cup soy sauce
- 2 tbsp sweet chilli sauce
- 2 cloves garlic, chopped
- 6-8 cups salad greens
- Juice of 1 large lemon
- 1 1/2 cups olive oil
- 1 tsp sesame oil
- Handful parsley, coarsely chopped

Method: |
- Place calamari in a colander in a sink full of cold water to thaw for 10
minutes.
- Drain, pat dry with a cloth or paper towels and then marinate in the soy
sauce, sweet chilli sauce and garlic for at least an hour.
- Just before serving, drizzle lemon juice and olive oil over the salad
leaves and toss well.
- Grill the calamari very quickly on the hottest part of the grill until it
is lightly browned.
- Slice, and scatter over the salad leaves
- Sprinkle with sesame oil and chopped parsley and season with salt and
freshly ground pepper to taste.
