Crab Cakes with Avocado Dressing

Beautiful Crab Cakes with a delightful Avocado Dressing. . . .
Ingredients:
  • 300g Crabmeat/Surimi, thinly sliced
  • 1 Egg
  • 1 cup Fresh breadcrumbs
  • 2 tsp Mayonnaise
  • Cracked pepper
  • 1 tsp Sweet chilli sauce
  • Squeeze of lemon juice
  • The Grove Avocado oil
Method:
  1. Combine crabmeat with bread crumbs and mix in beaten egg, mayonnaise, pepper and chilli sauce
  2. Form crab mixture into patties and refrigerate for an hour to let them set
  3. Heat avocado oil in a pan and fry patties lightly until golden on each side, turning once
  4. Serve with a fresh green salad and drizzle with avocado dressing
Avocado Dressing:
  • 1/2 a ripe avocado
  • 1/2 cup natural yoghurt
  • 1 tbsp lemon juice
  • 2 tbsp sour cream
Combine all ingredients in a food processor until well blended and serve at room temperature.
