Crab Cakes with Avocado Dressing |

Beautiful Crab Cakes with a delightful Avocado Dressing. . . . |

Ingredients: |
- 300g Crabmeat/Surimi, thinly sliced
- 1 Egg
- 1 cup Fresh breadcrumbs
- 2 tsp Mayonnaise
- Cracked pepper
- 1 tsp Sweet chilli sauce
- Squeeze of lemon juice
- The Grove Avocado oil

Method: |
- Combine crabmeat with bread crumbs and mix in beaten egg, mayonnaise,
pepper and chilli sauce
- Form crab mixture into patties and refrigerate for an hour to let them
set
- Heat avocado oil in a pan and fry patties lightly until golden on each
side, turning once
- Serve with a fresh green salad and drizzle with avocado dressing

Avocado Dressing: |
- 1/2 a ripe avocado
- 1/2 cup natural yoghurt
- 1 tbsp lemon juice
- 2 tbsp sour cream
|
Combine all ingredients in a food processor until well blended and serve at room temperature. |
