Salmon Fillet with Orange & Thyme

A quick and delicious way to enjoy a Salmond Fillet. . . .

Ingredients:
|
- 1/4 cup orange juice
- 1tsp orange zest
- 2 tsp honey
- 2 tsp fresh thyme sprigs
- 1 whole salmon fillet
- Chopped fresh herbs to garnish
|

Method:
|
- Combine orange juice, zest, honey and thyme sprigs in a small bowl
- Place the fillet skin side down in a large baking dish lined with foil and pour over the orange and honey mixture
- Cook in a preheated oven at 200˚C for 15 minutes or until the fillet is just cooked through
- Place under a grill for a further 2 to 3 minutes until the salmon starts to brown
- Place the salmon on a platter and serve with baby potatoes and green beans, sprinkled with chopped fresh herbs
