Salmon Fillet with Orange & Thyme
A quick and delicious way to enjoy a Salmond Fillet. . . .
Ingredients:
  • 1/4 cup orange juice
  • 1tsp orange zest
  • 2 tsp honey
  • 2 tsp fresh thyme sprigs
  • 1 whole salmon fillet
  • Chopped fresh herbs to garnish
Method:
  1. Combine orange juice, zest, honey and thyme sprigs in a small bowl
  2. Place the fillet skin side down in a large baking dish lined with foil and pour over the orange and honey mixture
  3. Cook in a preheated oven at 200˚C for 15 minutes or until the fillet is just cooked through
  4. Place under a grill for a further 2 to 3 minutes until the salmon starts to brown
  5. Place the salmon on a platter and serve with baby potatoes and green beans, sprinkled with chopped fresh herbs
