Prawn and Broccoli Stir Fry

Ingredients:
|
- 2 Tblsp vegetable oil
- 500 grams Prawn Cutlets, defrosted and drained
- 1 onion, peeled and sliced
- 1 head broccoli, cut into florets
- 1 yellow pepper, deseeded and sliced
- 2 tsp minced ginger
- 1 Tblsp cornflour
- 1/2 cup water
- 2 Tblsp dry sherry
- 2 Tblsp oyster sauce
- 2 Tblsp soy sauce

Method:

- Heat 1 Tblsp oil in a wok or deep frying pan and add the Prawn Cutlets. Cook until they change colour. Remove from the wok and set aside.
- Add remaining oil to the wok, add onion, broccoli, yellow pepper and ginger, stir fry over a medium heat until the broccoli is almost tender.
- Combine cornflour, water, sherry, oyster sauce and soy sauce and mix to a smooth paste.
- Pour cornflour mixture over vegetables, cook stirring until the sauce thickens. Return prawns to wok, toss through sauce, cook for 2-3 minutes or until thoroughly heated.
- Serve with your favourite noodles or rice.
