A quick and delicious way to enjoy beautiful oysters. . . .

Ingredients:
|
- 500gm Scallops
- 1 bunch asparagus, cut into 4cm lenths
- 1/4 cup chopped onions
- 2 Tbls melted butter
- 1 can mushroom soup
- 1 cup bread cubes
- 1/2 cup milk
- 1/2 - 1 tsp curry powder
- Sprig parsley
- 1/4 tsp pepper
- 1 cup shredded cheese
- lemon rind, grated

Method:
|
- Thaw scallops if frozen, wash and drain well
- Simmer scallops in boiling water, drain
- Saute onions, add soup, milk, curry, pepper and half of the cheese, stirring continuously until cheese melts
- Slice scallops and add to soup mix along with asparagus
- Add bread cubes that have been dipped in melted butter
- Sprinkle with remaining cheese and bake in 215 degree celcius oven for 30mins or until golden
- Remove from oven and sprinkle with chopped parsley and lemon rind just prior to serving
