Chilled Oysters
Oysters
A quick and delicious way to enjoy beautiful oysters. . . .
Ingredients:
  • 1-2 dozen oysters in half shell
  • 1/2 cup lemon juice
  • 1 clove garlic, chopped finely
  • 2 tbsp olive oil
  • 1/2 cup dry white wine
  • 3 small chillies
  • 1 onion, chopped finely
  • 1 tbsp fresh parsley
  • Cracked black pepper, to taste
Method:
  1. Remove oysters from the shell, clean shells and reserve
  2. Place lemon, garlic, pepper, onions, wine and chillies into a saucepan and bring to the boil
  3. Simmer until onion is transparent (approximately 5 minutes), remove from heat and let cool slightly
  4. Stir in the oysters, cover and marinate in the fridge for 2-12 hours
  5. When ready to serve, stir in olive oil and spoon an oyster into each shell, fill each shell with marinade
  6. Sprinkle with chopped parsley and place on a bed of crushed ice
Serves: 2 - 4
