Pasta with Smoked Mussels & Basil Cream
Smoked Mussels
Ingredients:
  • 3 tbsp The Grove Extra Virgin Avocado Oil
  • 2 cloves garlic, crushed
  • 1 cup cream
  • 3 tbsp fresh basil leaves, thinly sliced
  • 100g smoked mussels
  • 500g fresh spinach fettuccine
  • 2tbsp raw almonds, sliced and tossed in a hot pan for 1-2 minutes until toasted
  • Basil sprigs to garnish
Method:
  1. Heat oil in a large pan, stir in garlic and sauté over a low heat for 2 minutes.
  2. Add cream, heat to boiling then boil for about 3 minutes or until slightly thickened.
  3. Stir in basil and smoked mussels.
  4. Meanwhile, cook pasta in plenty of salted boiling water until al dente, or firm to the bite, and drain.
  5. Toss pasta with cream sauce and toasted almonds, and serve garnished with fresh basil sprigs.
