Pasta with Smoked Mussels & Basil Cream |

Ingredients: |
- 3 tbsp The Grove Extra Virgin Avocado Oil
- 2 cloves garlic, crushed
- 1 cup cream
- 3 tbsp fresh basil leaves, thinly sliced
- 100g smoked mussels
- 500g fresh spinach fettuccine
- 2tbsp raw almonds, sliced and tossed in a hot pan for 1-2 minutes until
toasted
- Basil sprigs to garnish

Method: |
- Heat oil in a large pan, stir in garlic and sauté over a low heat for 2
minutes.
- Add cream, heat to boiling then boil for about 3 minutes or until slightly
thickened.
- Stir in basil and smoked mussels.
- Meanwhile, cook pasta in plenty of salted boiling water until al dente, or
firm to the bite, and drain.
- Toss pasta with cream sauce and toasted almonds, and serve garnished with
fresh basil sprigs.
