A beautifully attractive way to serve shrimp, these entrees will be sure to impress! If you are not partial to melon, then you might like to use avocados instead, serving two avocado halves per person.

Ingredients:
|
- 350g Shrimp
- 2 small ripe rockmelons or pawpaw
- 120g Lime Hollandaise
- Juice of one crushed garlic clove
- Dash of lime or lemon juice
- Freshly ground black pepper
- Lettuce and lime wedges to serve

Method:
|
- Place the shrimps in a colander in a sink of cold water to thaw for 10 minutes, drain.
- Slice the rockmelons or pawpaws in half, and carefully remove the seeds and fibrous insides.
- In a bowl, blend together the Lime Hollandaise, garlic juice, lime or lemon juice, and black pepper.
- Add the shrimp to the Lime Hollandaise mixture and toss well to coat, then spoon the mixture into the cavities in the melon halves.
- Chill and serve on a bed of fancy lettuce, garnished with lime wedges.
